Storia – Highland Park è la più settentrionale delle distillerie scozzesi e la prima fondata sulle remote isole Orcadi (Orkney), Scapa fu fondata nel 1885. Lontane dagli agenti delle tasse, erano il luogo perfetto per la distillazione illegale, che infatti prosperava, seppur su piccola scala. Fu fondata nel 1798 dal distillatore, contrabbandiere e sacrestano Magnus Eunson di cui si dice che, per sfuggire a dei controlli, arrivò a nascondere il whisky sotto il pulpito della chiesa. Nel 1813 ironicamente la distilleria fu rilevata dall’ufficiale che riuscì ad arrestarlo, John Robertson. La licenza arrivò nel 1825/6 sotto la proprietà della famiglia Borvick. Nel 1876 passò nelle mani di William Stuart, proprietario di Miltonduff, nel 1885 James Grant si associò e dieci anni più tardi, dopo esserne divenuto l’unico proprietario, ampliò la distilleria. Il whisky di HP godette per molti anni di ottima reputazione tanto che nel 1883 fu servito in un banchetto organizza to dai reali inglesi (cui parteciparono anche l’Imperatore di Russia e il Re di Danimarca) e fu unanimemente acclamato come “il migliore mai assaggiato”. A fine secolo domanda e produzione di whisky raggiunsero numeri incredibili ma già ai primi del ‘900 la situazione cambiò drammaticamente e le vendite crollarono. Nonostante questo e nonostante la grossa distanza che la separa dai grandi blender, riuscì a sopravvivere e rimase aperta fino alla prima guerra mondiale. Nel 1979 Highland Distilleries –proprietari dal 1937– decisero di promuovere Highland Park come single malt (12 anni) e nel 1986 fu realizzato il visitor centre. HP è una delle poche distillerie ad usare acqua dura, che attinge dalle Cattie Maggie’s Springs. Ormai solo il 20% dell’orzo utilizzato è maltato in proprio nei 5 malting floors: viene essiccato per 18 ore su un fuoco di torba d’erica aromatica locale (molto diversa dalla torba più marina e salmastra di Islay) e altre 18 ore a carbone. Il livello di fenolo è di circa 30-40 parti per milione (ppm). Il restante orzo maltato (non torbato) viene invece acquistato e poi mischiato a quello torbato per cui il livello di fenolo finale si attesta intorno ai 15 ppm. La distilleria è equipaggiata con un grande semi lauter mash tun dalla capacità di 12 tonnellate (utilizzato al 50%), 12 washback di pino dell’Oregon e 4 alambicchi (2 spirit still + 2 wash still). Il processo di fermentazione del malto dura 50-80 ore. Il whisky generalmente matura in botti di quercia europea ex sherry poi equilibrato da altro distillato proveniente da botti ex bourbon. Circa 10 milioni di sterline l’anno sono state spese solo per le botti. HP è il whisky preferito dall’ispettore Rebus, il personaggio dei noir di Ian Rankin, e nel 2007, a vent’anni dall’uscita del primo romanzo, è uscito un single cask commemorativo in edizione limitata (Rebus 20 anni). Oltre a questa tante altre edizioni limitate sono uscite nel corso degli anni, come l’HP Capella che commemora i 60 anni dell’Italian Chapel e naturalmente la Valhalla Collection dedicata a 4 divinità della mitologia norrena: Thor, Loki, Freya e Odino.
Carattere – Highland Park è un whisky mediamente corposo, complesso, con tracce evidenti, ma non dominanti, di fumo di torba e note d’erica, aromi di miele e malto e sentori speziati. E’ un componente importante in blend come Long John, The Famous Grouse e Cutty Sark.

History: Highland Park is the highest distillery of Scotland, the first distillery established on the remote Orkney Islands, Scapa was been founded in 1885. Far away from the taxes officers it was the perfect place for the illegal distillation which was quite frequent. It was been established in 1798 by a distillator, smuggler and sexton Magnus Eunson who is said that to escape the controls he hid whisky below the pulpit of church. Ironically John Robertson took over as Highland Park owner, he was the officer that took Magnus Eunson under arrest. The license for legal distillation was achieved in 1825/6 when Highland Park was under the control of Borvick family. In 1876 HP passed into the hands of William Stuart, owner of Miltonduff. About in the 1885 James Grant became partner then in the following ten years he was remained like only owner, he decided to increasing the distillery. HP whisky had a strongly reputation during that period indeed in 1883 it was served in a royal banquet organized by the British royal (in which partecipated even the Emperor of Russia and the King of Denmark) they said that HP whisky was the best whisky ever drunken. At the beginning of the 20th century sales dropped down. Despite the fearsome competion of blended HP remained open until the World War I. In 1979 Highland Distilleries (HP owner since 1937) decided to produce the 12 yo single malt, in 1986 they built the visitor centre. Hp is one of few distilleries adopting hard water which comes from Cattie Maggie’s Springs. Nowadays only 20% of barley is malted by HP in the 5 malting floors: it is dehydrated for at least 18 hours with a peaty fire of local aromatic heather (very different from the Islay peat more marine and smoky) and others 18 hours by coal. The Phenol levels are about 30-40 part per milion (PPM). The remaining malted barley (not peated) is purchased and then it mixed with peated barley thus the final level of phenols is around of 15 PPM. HP is equipped with a big semi-lauter mash tun, it has
12 tons of capacity (used at 50%), 12 Oregon pine washback and 4 stills (2 spirit still + 2 wash stills). Fermeting malt is a process which goes on from 50 to 80 hours. Usually HP aged their whisky in European oak ex- sherry then balanced from another distillate which comes from ex-bourbon casks. About 10 milions of punds was spent last year for casks. HP is the best Whisky for the inspector Rebus, the famous character of noir by Ian Rankin, indeed in 2007 HP realesed a commemorative bottle for twenty years since the first novel (Rebus 20 year). Beyond this special edition , Hp has produced many others limited edition during last period, such l’HP Capella which is tought to commemorate the 60 years from foundation of Italian Chapel. Naturally even the Valhalla Collection is a limited edition which is dedicated to 4 Divinity of Norse mitology: Thor, Loky, Freya and Odino.

Character: HP is a whisky on average full-bodied, complex, with evident traces of smoked peat (not dominant) and heather notes. Aromas of honey and malt with a spicy character. HP is an important component of Blends like Long John, The Famous Grouse and Cutty Sark.
